This stew is delicious on winter days. But to be honest, we also enjoy it in the summer. You don't have to be a chef to make this dish. Curious?
Chop 1 onion and let it stew for 2 minutes in a cast iron pot. Then immediately add the diced chicken and 1 tbsp. tomato puree. The tomato puree will give it a deep red colour.
Pour in the bottles of Grimbergen beer; the more chicken you use, the more beer you will need. Usually 1 or 2 bottles are enough. In the meantime you can cut all the vegetables; being carrots, parsnips, mushrooms. Add all cut vegetables to the dish. Tip: you can add any vegetables you like. We like carrot, parsnip and mushroom, but courgette for example is also a match made in heaven!
This stew should stew for about an hour and a half on a low flame (with lid). You should stir every 15 minutes. In this way, all the vegetables and the chicken can be cooked nicely.
Finish off with chives, parsley and a slice of lime. Bon appetit!
