Roasted vegetables with potato from the oven

With this veggie meal, you really can vary endlessly with the vegetables you want. By the way, this is also an ideal meal to prepare the day before.

Getting started

Preheat the oven to 200 degrees. Cut all the vegetables into small pieces about 1 to 2 cm in size. Here we use carrots, peppers, courgettes, olives, tomatoes and aubergines. Cut the potatoes into wedges. 

Mix everything with a dash of olive oil in an ovenproof dish. Season with pepper, salt, fresh thyme and rosemary. For those who like it, you can also mix in pieces of feta cheese. Roast the vegetables and potatoes in the preheated oven for about 35 minutes. It's that simple, a plate full of vitamins!
