Stuffed portobello with spinach and goat cheese

Getting started

Heat the oven at 200 degrees. Clean the portobello mushrooms with a dry kitchen paper. Then place them in an oven dish.

Chop the onion and finely chop the garlic. Fry this in a frying pan and add the spinach. Then add the goat's cheese together with some pepper and salt. Fill the portobello mushrooms with this mixture. Garnish with pine nuts and bake the portobello's for 15 minutes until golden brown. Top with fresh parsley when you remove the portobello from the oven. Delicious with rice!
